Valentine's Day White Chocolate Raspberry Cookies

Irresistible White Chocolate Raspberry Cookies
Soft, chewy and packed with flavour, these cookies are surprisingly easy to make! Whether you're baking for a Valentine's, Galentine's, or just yourself, these white chocolate and raspberry cookies will become your new go-to bake.
You will need:
170g unsalted butter, melted
200g light brown sugar
50g granulated sugar
1 large egg + 1 large egg yolk
2 tsp vanilla extract
250g plain flour
3/4 tsp baking soda
1/2 tsp salt
170g white chocolate chips
60g frozen raspberries
Step by step:
- 1. Preheat your oven to 180°C and line a baking tray baking sheet.
- In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until fully combined.
- Add the egg, egg yolk, and vanilla extract, and mix well.
- In a separate bowl, whisk together the flour, salt, and baking soda.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
- Fold in the white chocolate chips, then gently stir in the frozen raspberries until evenly distributed.
- Roll the cookie dough into balls. Work quickly, as the raspberries may start to thaw!
- Place cookies 2 inches apart on the prepared baking sheet.
- Bake for 12 minutes, or until the edges are golden brown and the centres are slightly underdone.
- Let cool before enjoying!
