Ingredients:
- 60g soft pitted dates
- 30g unsalted butter
- 50g dark muscovado sugar
- 1 medium egg
- 2 tbsp golden syrup
- Zest of 1 orange
- Half an apple, peeled and grated
- 60g plain flour
- ¼ tsp mixed spice
- ¼ tsp bicarbonate soda
For the sauce:
- 40g unsalted butter
- 40g dark muscovado sugar
- 50ml double cream
Method:
- In a small bowl or ramekin, add the dates and cover with just enough boiling water (about 50ml). Let them sit for 10 minutes, then mash with a fork to create a paste.
- In a separate bowl, beat together the butter and dark muscovado sugar until fluffy. Add the egg and mix well, then stir in the golden syrup, orange zest, and grated apple.
- Gently fold in the flour, mixed spice, and bicarbonate of soda, followed by the date paste.
- Spoon the mixture into two lightly greased pudding moulds and place them in the air fryer basket.
- In another bowl, combine the sauce ingredients and place them in the other air fryer basket.
- Set the pudding basket to 150°C for 15 minutes and the sauce to 200°C for 8 minutes. Use the SYNC finish button so they’re ready at the same time, stirring the sauce every minute or so to keep it smooth.
- Once done, carefully remove the puddings from the moulds and drizzle over the sauce.
